  • 2 medium carrots (about 150g)
  • 2 medium waxy potatoes (about 300g)
  • 1 cup dill pickles (chopped, about 150g)
  • 1 small red onion (finely chopped, about 100g)
  • 3 tbsp vegetable oil
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare your vegetables by washing them thoroughly. Peel the beets and potatoes, then dice them into small cubes. Cut the carrots into similar-sized pieces.
  2. Boil water in separate pots with a pinch of salt. Cook beets for about 15 minutes and potatoes for about 10 minutes until tender but not mushy. Drain and let cool.
  3. In a large mixing bowl, combine cooled beets, potatoes, diced carrots, chopped pickles, and red onion.
  4. In a small bowl, whisk together vegetable oil, apple cider vinegar, salt, and pepper. Pour the dressing over the vegetable mixture and toss gently to coat.
  5. Refrigerate for at least an hour before serving to allow flavors to meld.
