  • 8 oz spaghetti or penne
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 cloves fresh garlic, minced
  • 4 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente (about 8-10 minutes). Reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, warm 2 tablespoons of olive oil. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in chickpeas and cook for an additional 5 minutes until slightly crispy.
  4. Pour in lemon juice and add the chopped herbs. Simmer for about 2 minutes.
  5. Combine the drained pasta with the chickpea mixture, tossing to coat evenly. Add reserved pasta water as needed for a creamy consistency.
  6. Season with salt and pepper to taste, then drizzle with remaining olive oil before serving.
