Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 pound fresh green beans (trimmed)
  • 1 pound Yukon Gold potatoes (cubed)
  • 4 tbsp extra virgin olive oil
  • 4 cloves garlic (minced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Drizzle olive oil in a large baking dish.
  3. Pat chicken breasts dry and season both sides with salt, pepper, thyme, and rosemary. Place them in the dish.
  4. Add green beans and cubed potatoes around the chicken. Drizzle with additional olive oil and squeeze lemon juice on top.
  5. Mix gently to coat all ingredients evenly.
  6. Roast for 30-35 minutes until golden brown and cooked through. Let rest for a few minutes before serving.
