- 1 pound Yukon Gold potatoes (cubed)
- 4 tbsp extra virgin olive oil

- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Juice of 1 lemon
Instructions
- Preheat oven to 400°F (200°C).
- Drizzle olive oil in a large baking dish.
- Pat chicken breasts dry and season both sides with salt, pepper, thyme, and rosemary. Place them in the dish.
- Add green beans and cubed potatoes around the chicken. Drizzle with additional olive oil and squeeze lemon juice on top.
- Mix gently to coat all ingredients evenly.
- Roast for 30-35 minutes until golden brown and cooked through. Let rest for a few minutes before serving.
