Description

Ingredients

  • Ribeye or Sirloin Steak
  • Yukon Gold Potatoes
  • Fresh Garlic
  • Unsalted Butter
  • Olive Oil
  • Fresh Herbs (Thyme or Rosemary)
  • Salt & Pepper
  • Lemon Juice

Instructions

  1. Preheat oven to 425°F (220°C). Wash and chop potatoes into bite-sized pieces.
  2. Season steak with salt and pepper; let rest for 30 minutes at room temperature.
  3. Heat olive oil in a cast-iron skillet over medium-high heat. Sear steak for 3-4 minutes on each side until browned.
  4. Add smashed garlic cloves and herbs around the steak. Cook to desired doneness (medium rare: 135°F/57°C).
  5. Reduce heat, add butter, and baste the steak as it melts.
  6. Spread potatoes on a baking sheet, drizzle with olive oil, salt, and pepper. Roast until golden brown (25-30 minutes).
