- Ribeye or Sirloin Steak
- Yukon Gold Potatoes
- Fresh Garlic

Instructions
- Preheat oven to 425°F (220°C). Wash and chop potatoes into bite-sized pieces.
- Season steak with salt and pepper; let rest for 30 minutes at room temperature.
- Heat olive oil in a cast-iron skillet over medium-high heat. Sear steak for 3-4 minutes on each side until browned.
- Add smashed garlic cloves and herbs around the steak. Cook to desired doneness (medium rare: 135°F/57°C).
- Reduce heat, add butter, and baste the steak as it melts.
- Spread potatoes on a baking sheet, drizzle with olive oil, salt, and pepper. Roast until golden brown (25-30 minutes).
