  • 4 boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 4 garlic cloves, minced
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts generously with salt and pepper.
  3. In a bowl, mix minced garlic, olive oil, thyme, and oregano. Rub mixture all over chicken.
  4. Place seasoned chicken in the prepared baking dish with white beans and cherry tomatoes; toss gently.
  5. Add fresh spinach on top and drizzle with additional olive oil.
  6. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C). Let cool slightly before serving.
