Ingredients

  • 1 lb lean ground beef
  • 8 corn or flour tortillas
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, chopped
  • 2 cups enchilada sauce (store-bought or homemade)
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream (for serving)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the ground beef and onion until cooked through; drain excess fat.
  3. Stir in chili powder, cumin, garlic powder, and half of the enchilada sauce; simmer for 5 minutes.
  4. Fill each tortilla with the beef mixture, roll tightly and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over the tortillas and top with shredded cheddar cheese.
  6. Bake for 20-25 minutes until bubbly and golden brown; let cool slightly before serving.
