- 8 corn or flour tortillas
- 2 cups shredded sharp cheddar cheese
- 1 medium onion, chopped
- 2 cups enchilada sauce (store-bought or homemade)
- ¼ cup fresh cilantro, chopped
- ½ cup sour cream (for serving)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a skillet over medium heat, brown the ground beef and onion until cooked through; drain excess fat.
- Stir in chili powder, cumin, garlic powder, and half of the enchilada sauce; simmer for 5 minutes.
- Fill each tortilla with the beef mixture, roll tightly and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the tortillas and top with shredded cheddar cheese.
- Bake for 20-25 minutes until bubbly and golden brown; let cool slightly before serving.
