Instructions
- In a large bowl, whisk together flour, baking powder, cinnamon, and nutmeg.
- Add eggnog, milk, and melted butter to the dry ingredients. Mix gently until just combined.
- Preheat a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on top (about 3 minutes), then flip and cook until golden brown (about 2 more minutes).
- Serve warm with maple syrup or whipped cream.
