- 1 lb large shrimp (21–25 count), deveined
- 8 spring roll wrappers (rice paper or traditional)
- 2 tbsp blackening spice (paprika, cayenne, garlic powder, oregano)
- 1 cup shredded lettuce
- 1 cup bell peppers, thinly sliced
- ¼ cup fresh cilantro, chopped
- ½ cup sour cream or Greek yogurt
- 2 tbsp lime juice
- Oil for frying
Instructions
- Heat a skillet over medium-high heat and add oil. Season shrimp with blackening spice and cook for 3-5 minutes until pink and opaque. Remove from heat.
- While shrimp cools, chop lettuce and bell peppers into thin strips.
- Soak spring roll wrappers in warm water until soft. Lay flat on a clean surface.
- Assemble rolls by layering lettuce, shrimp, and veggies on each wrapper. Fold sides in and roll tightly from the bottom.
- Heat oil in a frying pan over medium heat. Fry rolls seam-side down for 2-3 minutes per side until golden brown.
- Serve with a drizzle of lime crema made from sour cream or Greek yogurt blended with lime juice.
