  • 1 lb large shrimp (2125 count), deveined
  • 8 spring roll wrappers (rice paper or traditional)
  • 2 tbsp blackening spice (paprika, cayenne, garlic powder, oregano)
  • 1 cup shredded lettuce
  • 1 cup bell peppers, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream or Greek yogurt
  • 2 tbsp lime juice
  • Oil for frying

Instructions

  1. Heat a skillet over medium-high heat and add oil. Season shrimp with blackening spice and cook for 3-5 minutes until pink and opaque. Remove from heat.
  2. While shrimp cools, chop lettuce and bell peppers into thin strips.
  3. Soak spring roll wrappers in warm water until soft. Lay flat on a clean surface.
  4. Assemble rolls by layering lettuce, shrimp, and veggies on each wrapper. Fold sides in and roll tightly from the bottom.
  5. Heat oil in a frying pan over medium heat. Fry rolls seam-side down for 2-3 minutes per side until golden brown.
  6. Serve with a drizzle of lime crema made from sour cream or Greek yogurt blended with lime juice.
