  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 4 whole wheat tortillas
  • 1 ripe avocado, mashed
  • 1/2 cup plain Greek yogurt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 cup bell peppers, diced
  • 1 cup fresh spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: Rinse chickpeas and black beans under cold water.
  2. Mash half of the chickpeas in a bowl until chunky.
  3. Mix in cumin, chili powder, and smoked paprika until well combined.
  4. Fold in diced bell peppers, black beans, and spinach to the chickpea mixture.
