  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 6 slices bacon
  • 1/2 cup ranch dressing
  • 8 large lettuce leaves (romaine or butter lettuce)
  • 1 cup cherry tomatoes, halved
  • 3 green onions, finely sliced
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper; bake for 25-30 minutes until cooked through.
  2. Fry bacon in a skillet over medium heat until crispy (about 5-7 minutes). Drain on paper towels and crumble.
  3. Wash and dry the lettuce leaves; arrange them on a platter.
  4. Shred the baked chicken using two forks and mix in half of the crumbled bacon.
  5. Spoon the chicken mixture into each lettuce leaf; drizzle with ranch dressing.
