  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup fresh lime juice
  • 2 tbsp honey
  • 1/4 cup low-sodium soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 2 colorful bell peppers, sliced
  • 1 cucumber, sliced
  • 4 large tortillas (whole wheat or spinach)

Instructions

  1. In a bowl, combine lime juice, honey, soy sauce, garlic powder, and black pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Heat oil in a skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side until golden brown and cooked through (165°F internal temperature).
  3. While the chicken cooks, slice bell peppers and cucumber into thin strips.
  4. Lay out tortillas, place sliced chicken and veggies in the center, drizzle with extra marinade if desired.
  5. Fold in the sides of each tortilla and roll tightly to enclose the fillings.
  6. Slice wraps diagonally to serve with extra lime wedges or dipping sauce.
