  • 2 cloves fresh garlic, minced
  • 1 cup carrots, thinly sliced
  • 1 cup cucumber, thinly sliced (preferably English)
  • 1 cup red cabbage, shredded
  • ½ cup fresh cilantro, chopped
  • Juice of 1 lime
  • ½ cup creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tsp sriracha or chili paste (optional)
  • 24 tbsp water (to adjust consistency)

Instructions

  1. Prepare your ingredients by chopping the vegetables and mincing the garlic.
  2. In a skillet over medium-high heat, add oil and cook the seasoned chicken breasts for about 6-7 minutes on each side until golden brown and cooked through. Remove from heat and let rest.
  3. In a small bowl, whisk together peanut butter, soy sauce, honey (or maple syrup), sriracha, and water until smooth.
  4. Slice the cooked chicken into strips.
