  • 4 medium-sized potatoes, peeled and diced
  • 2 sweet onions, chopped
  • 4 cloves garlic, minced
  • 1 tsp ground turmeric
  • 1 tsp cumin seeds
  • 2 green chilies, chopped (adjust to taste)
  • ½ cup fresh cilantro leaves, chopped
  • 3 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 2 cups water or vegetable broth

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onions and sauté until golden brown (about 5 minutes). Stir in minced garlic and green chilies.
  2. Sprinkle turmeric and cumin seeds into the pot; sauté for another 2 minutes until fragrant.
  3. Add diced potatoes, stirring to coat them in the spice mixture. Cook for about 5 minutes until lightly golden.
  4. Mix in tomato paste followed by water or vegetable broth to cover the potatoes. Bring to a simmer and cook for about 20 minutes, or until the potatoes are tender.
  5. Stir in fresh cilantro just before serving. Serve with rice or bread.
