- 4 medium-sized potatoes, peeled and diced
- 2 sweet onions, chopped
- 4 cloves garlic, minced
- 1 tsp ground turmeric
- 1 tsp cumin seeds
- 2 green chilies, chopped (adjust to taste)
- ½ cup fresh cilantro leaves, chopped
- 3 tbsp tomato paste
- 2 tbsp vegetable oil
- 2 cups water or vegetable broth
Instructions
- Heat vegetable oil in a large pot over medium heat. Add chopped onions and sauté until golden brown (about 5 minutes). Stir in minced garlic and green chilies.
- Sprinkle turmeric and cumin seeds into the pot; sauté for another 2 minutes until fragrant.
- Add diced potatoes, stirring to coat them in the spice mixture. Cook for about 5 minutes until lightly golden.
- Mix in tomato paste followed by water or vegetable broth to cover the potatoes. Bring to a simmer and cook for about 20 minutes, or until the potatoes are tender.
- Stir in fresh cilantro just before serving. Serve with rice or bread.
