- 1 tsp sesame oil
- 2 green onions, sliced (for garnish)
- Optional: 1 cup cubed tofu or cooked chicken
Instructions
- Boil water in a large pot. Cook the lo mein noodles according to package instructions until al dente. Drain and set aside, reserving some pasta water.
- In a large pan over medium-high heat, add vegetable oil. Stir-fry minced garlic for about 30 seconds before adding bell peppers, broccoli, and carrots. Cook until tender and vibrant (about 3 minutes).
- Add the cooked noodles to the pan with vegetables. Pour in soy sauce and sesame oil, mixing well. If too dry, add a splash of reserved pasta water.
- Finish cooking for another minute until heated through. Top with sliced green onions before serving.
