Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 cups diced carrots (about 4 medium)
  • 2 cups diced Yukon Gold potatoes (about 3 medium)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop vegetables into bite-sized pieces; dice the onion and mince the garlic.
  2. Set Instant Pot to sauté mode. Add olive oil, onions, and garlic; sauté for about 3 minutes until soft.
  3. Season chicken thighs with salt and pepper; add to pot and brown each side for about 4 minutes.
  4. Add carrots, potatoes, chicken broth, thyme, and bay leaves; stir well.
  5. Seal the lid and set the Instant Pot to high-pressure cook for 10 minutes.
  6. After cooking time ends, carefully perform a quick release of pressure. Remove bay leaves before serving.
