  • 1 (5 lb) bone-in leg of lamb
  • 1 cup unsalted butter, softened
  • ¼ cup fresh rosemary, chopped
  • ¼ cup fresh thyme, chopped
  • ¼ cup fresh parsley, chopped
  • 6 garlic cloves, minced
  • Zest of 1 lemon
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix softened butter, minced garlic, herbs, lemon zest, salt, and pepper until combined.
  3. Pat the leg of lamb dry and rub half the herb butter all over it.
  4. Heat olive oil in a skillet over medium-high heat; sear each side of the lamb for about 4-5 minutes until browned.
  5. Transfer the lamb to a roasting pan and smear with remaining herb butter. Roast for approximately 1 hour 20 minutes or until it reaches an internal temperature of 135°F (57°C) for medium-rare.
  6. Let rest for 15-20 minutes before slicing.
