- 1 (5 lb) bone-in leg of lamb
- 1 cup unsalted butter, softened
- ¼ cup fresh rosemary, chopped
- ¼ cup fresh thyme, chopped
- ¼ cup fresh parsley, chopped
- 6 garlic cloves, minced
- Zest of 1 lemon
- 2 tsp kosher salt
- 1 tsp black pepper
- 2 tbsp extra virgin olive oil
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix softened butter, minced garlic, herbs, lemon zest, salt, and pepper until combined.
- Pat the leg of lamb dry and rub half the herb butter all over it.
- Heat olive oil in a skillet over medium-high heat; sear each side of the lamb for about 4-5 minutes until browned.
- Transfer the lamb to a roasting pan and smear with remaining herb butter. Roast for approximately 1 hour 20 minutes or until it reaches an internal temperature of 135°F (57°C) for medium-rare.
- Let rest for 15-20 minutes before slicing.
