Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/4 cup toasted pine nuts
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or basil, for garnish

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, and smoked paprika until well combined.
  2. Place chicken breasts in a resealable plastic bag or bowl; pour the marinade over them. Seal tightly and refrigerate for at least 30 minutes.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove chicken from marinade and grill for 6-7 minutes on each side until fully cooked (internal temperature should reach 165°F).
