  • 1 cup dark chocolate (at least 60% cocoa), chopped
  • 1 cup fresh raspberries
  • 1/2 cup coconut cream (from chilled can of coconut milk)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Melt the dark chocolate in a microwave-safe bowl in 30-second intervals until smooth.
  2. Line a muffin tin with cupcake liners. Spoon 1 tablespoon of melted chocolate into each liner, spreading it up the sides. Refrigerate for 10-15 minutes to set.
  3. In a separate bowl, whip together the chilled coconut cream, powdered sugar, and vanilla extract until fluffy. Gently fold in the fresh raspberries.
  4. Remove the chocolate cups from the fridge and fill each with the raspberry mixture. Drizzle remaining melted chocolate on top to seal.
