- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 3 cups fresh Granny Smith apples, peeled and thinly sliced
- 16 oz cream cheese, softened
- 1 cup sour cream
- 3 large eggs, room temperature
- ½ cup brown sugar
- 1 tsp cinnamon
Instructions
- Preheat your oven to 325°F (160°C) and grease a springform pan.
- In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press the mixture into the bottom of the prepared pan and bake for 10 minutes. Let cool.
- Toss sliced apples with brown sugar and cinnamon in another bowl.
- In a large mixing bowl, beat softened cream cheese until smooth. Add sour cream and granulated sugar; mix well. Incorporate eggs one at a time until just blended.
- Pour half of the cheesecake batter over the cooled crust, layer with half of the apple mixture, add remaining batter, and top with leftover apples.
- Bake for about 60 minutes until slightly jiggly in the center. Turn off the oven and let it cool gradually inside before transferring to room temperature.
