  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • 3 cups fresh Granny Smith apples, peeled and thinly sliced
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs, room temperature
  • ½ cup brown sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press the mixture into the bottom of the prepared pan and bake for 10 minutes. Let cool.
  3. Toss sliced apples with brown sugar and cinnamon in another bowl.
  4. In a large mixing bowl, beat softened cream cheese until smooth. Add sour cream and granulated sugar; mix well. Incorporate eggs one at a time until just blended.
  5. Pour half of the cheesecake batter over the cooled crust, layer with half of the apple mixture, add remaining batter, and top with leftover apples.
  6. Bake for about 60 minutes until slightly jiggly in the center. Turn off the oven and let it cool gradually inside before transferring to room temperature.
