Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 vanilla beans (split and seeds scraped)
  • 2 tsp unflavored gelatin powder
  • 3 tbsp cold water

Instructions

  1. Bloom the gelatin by sprinkling it over cold water in a small bowl; let it sit for about 5 minutes.
  2. In a saucepan over medium heat, combine heavy cream, whole milk, sugar, and vanilla bean seeds (and pods). Stir until warmed and sugar dissolves.
  3. Remove from heat and whisk in the bloomed gelatin until fully dissolved.
  4. Pour the mixture into individual molds or serving glasses. Refrigerate for at least 4 hours or overnight until set.
  5. To serve, gently run a knife around the edges and invert onto plates or serve straight from the glasses. Top with fresh berries or chocolate sauce if desired.
