  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 24 oz cream cheese, room temperature
  • ½ cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup granulated sugar (for caramel)
  • ½ cup heavy cream
  • 1 tsp sea salt

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a springform pan.
  2. Beat cream cheese until smooth. Gradually add sour cream, eggs (one at a time), vanilla, and remaining sugar; mix until creamy but avoid overmixing.
  3. Pour filling over crust and bake for about one hour or until edges are set but center is slightly jiggly. Cool slowly in the oven with the door cracked for an hour, then refrigerate for at least four hours.
  4. For the caramel sauce, melt sugar in a saucepan until golden brown. Stir in heavy cream (it will bubble) and add sea salt. Allow cooling.
  5. Drizzle cooled caramel over cheesecake before serving.
