  • 8 oz spaghetti or fettuccine
  • 1 lb fresh salmon fillet
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil and season the salmon with salt and pepper. Cook skin-side down for 4-5 minutes on each side until golden brown. Remove and flake into bite-sized pieces.
  3. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add heavy cream and stir gently.
  4. Mix in grated Parmesan cheese until melted smooth. Add lemon juice, salt, and pepper to taste.
  5. Combine cooked pasta, flaked salmon, and spinach into the sauce, adding reserved pasta water as needed for desired consistency.
  6. Serve warm with extra Parmesan or fresh herbs if desired.
