  • ½ cup granulated sugar (100g)
  • 1 tsp salt
  • 1 cup warm milk (240ml)
  • ½ cup melted butter (115g)
  • 2 large eggs
  • 3 cups chopped tart apples (450g)
  • 2 tsp ground cinnamon
  • ½ cup brown sugar (100g)

Instructions

  1. Prepare the dough: In a bowl, combine warm milk and yeast; let sit until bubbly. Mix in sugar, melted butter, eggs, salt, and half the flour. Gradually add remaining flour to form a soft dough.
  2. Knead the dough: On a floured surface, knead for about 10 minutes until smooth and elastic.
  3. First rise: Place in an oiled bowl, cover with a cloth, and let rise for about 1 hour or until doubled in size.
  4. Prepare the filling: Combine chopped apples with brown sugar and cinnamon in a separate bowl.
  5. Assemble the babka: Roll out the dough into a rectangle, spread apple filling evenly, then roll tightly into a log shape. Cut lengthwise and twist together.
  6. Second rise: Place braided dough in a greased loaf pan; let rise for another 30 minutes while preheating oven to 350°F (175°C).
  7. Bake: Bake for 35-40 minutes until golden brown. Drizzle with icing if desired.
