  • 1 lb lean ground beef
  • 6 slices thick-cut bacon
  • 1 cup long-grain white rice
  • 1 ½ cups water
  • 1 cup shredded cheddar cheese
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp mustard

Instructions

  1. In a large skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.
  2. In the same skillet with bacon grease, sauté diced onion until soft. Add minced garlic and cook for another minute.
  3. Add ground beef, breaking it up as it cooks until browned (about 5 minutes). Drain any excess fat if necessary.
  4. Stir in the rice, ketchup, mustard, and water. Bring to a simmer.
  5. Cover and cook on low for about 20 minutes or until liquid is absorbed and rice is tender.
  6. Once cooked, top with shredded cheddar cheese and cover briefly to melt.
