  • 23 ripe bananas (about 300g mashed)
  • 1 cup almond flour (100g)
  • 1 cup all-purpose flour (120g)
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1/4 cup honey or maple syrup (60ml)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together almond flour, all-purpose flour, baking powder, cinnamon, and a pinch of salt.
  4. Combine the eggs, honey or maple syrup, and vanilla extract into the mashed bananas; mix well.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Spoon or pipe the batter into the prepared donut pan about three-quarters full.
  7. Bake for 15-18 minutes until golden brown and springy to touch. Cool before serving.
