- 2 cups butternut squash, diced
- 2 cups Brussels sprouts, halved
- 2 cups marinara sauce
- 1 cup ricotta cheese (whole milk)
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Toss diced butternut squash and halved Brussels sprouts in olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes until tender.
- Cook ziti pasta in salted boiling water until al dente (8-10 minutes), then drain.
- In a large bowl, combine cooked ziti, roasted vegetables, marinara sauce, ricotta cheese, half of the mozzarella, Italian seasoning, salt, and pepper. Mix well.
- Transfer the mixture to a greased baking dish. Top with remaining mozzarella and Parmesan.
