  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes (about 2 cups), cubed
  • 1 cup barbecue sauce
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt, pepper, and paprika.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken for about 5 minutes per side until golden brown.
  4. Coat seared chicken with barbecue sauce and let caramelize slightly in the skillet.

  6. Place chicken and sweet potatoes in the oven; roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are fork-tender.
  7. Serve by placing sliced BBQ chicken next to roasted sweet potatoes in bowls, garnishing with cilantro if desired.
