Description

Birria Tacos with Consomme are a culinary delight that transports you to the heart of Mexico. These succulent, slow-cooked tacos feature tender beef chuck roast, infused with rich spices and served with a savory consomme for dipping. Ingredients

  • 23 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 4 cloves fresh garlic
  • 1 medium onion, chopped
  • 2 tsp Mexican oregano
  • 1 tsp ground cumin
  • 2 bay leaves
  • 4 cups low-sodium beef broth
  • Corn tortillas (for serving)
  • Fresh cilantro and diced onions (for garnish)

Instructions

  1. Prepare the Chiles: Remove stems and seeds from guajillo chiles. Toast in a skillet over medium heat for about 2 minutes until fragrant; transfer to a blender.
  2. Blend the Sauce: Add garlic, onion, cumin, oregano, and 1 cup of beef broth to the blender with toasted chiles. Blend until smooth.
  3. Sear the Meat: In a large pot or Dutch oven, sear the beef chuck roast on all sides over medium-high heat until golden brown. Remove from heat.
  4. Combine Ingredients: Pour blended sauce over the seared meat, add bay leaves and remaining beef broth. Bring to a simmer and cover.
  5. Slow Cook: Reduce heat to low and simmer for about 3 hours or until meat is fork-tender.
  6. Shred & Serve: Shred meat in the pot with two forks, mix with sauce, fill warm tortillas generously, serve with consomme for dipping, and garnish with cilantro and onions.
