- 2–3 lbs beef chuck roast
- 4 dried guajillo chiles
- 4 cloves fresh garlic
- 1 medium onion, chopped
- 2 tsp Mexican oregano
- 1 tsp ground cumin
- 2 bay leaves
- 4 cups low-sodium beef broth
- Corn tortillas (for serving)
- Fresh cilantro and diced onions (for garnish)
Instructions
- Prepare the Chiles: Remove stems and seeds from guajillo chiles. Toast in a skillet over medium heat for about 2 minutes until fragrant; transfer to a blender.
- Blend the Sauce: Add garlic, onion, cumin, oregano, and 1 cup of beef broth to the blender with toasted chiles. Blend until smooth.
- Sear the Meat: In a large pot or Dutch oven, sear the beef chuck roast on all sides over medium-high heat until golden brown. Remove from heat.
- Combine Ingredients: Pour blended sauce over the seared meat, add bay leaves and remaining beef broth. Bring to a simmer and cover.
- Slow Cook: Reduce heat to low and simmer for about 3 hours or until meat is fork-tender.
- Shred & Serve: Shred meat in the pot with two forks, mix with sauce, fill warm tortillas generously, serve with consomme for dipping, and garnish with cilantro and onions.
