  • 4 slices thick white or whole wheat bread
  • 2 large eggs
  • 1/2 cup full-fat milk (or plant-based milk)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/4 cup chopped onions
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped cilantro
  • Spicy green chutney to taste
  • Oil or butter for cooking

Instructions

  1. Slice the bread into thick pieces and lay them out on a plate.
  2. In a bowl, whisk together eggs and milk until frothy. Stir in cumin, coriander, and turmeric.
  3. Dip each slice of bread into the egg mixture, soaking for about 30 seconds per side.
  4. Heat oil or butter in a pan over medium heat. Cook soaked bread slices for 3-4 minutes per side until golden brown.
  5. Remove from heat and top with chopped onions, tomatoes, cilantro, and chutney.
  6. Serve immediately while warm.
