Description

  • 1 can refrigerated biscuit dough (8 count)
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon or sausage, crumbled
  • 2 green onions, finely chopped

Instructions

  1. Preheat oven to 375°F (190°C) and spray a muffin tin with nonstick cooking spray.
  2. In a skillet over medium heat, cook crumbled bacon or sausage until crispy; set aside.
  3. Whisk eggs in a bowl and scramble in the same skillet until just set and fluffy.
  4. Flatten each biscuit dough piece into a small circle. Add scrambled eggs, crumbled meat, cheese, and green onions to the center.
  5. Carefully wrap the dough around the filling and pinch closed at seams. Place seam-side down in the muffin tin.
  6. Bake for 15-20 minutes until golden brown. Let cool slightly before serving.
