  • 1 cup diced ham (leftover or deli)
  • 1 cup shredded cheese (cheddar and Monterey Jack mix)
  • 4 large eggs
  • ½ cup whole milk
  • 1 cup salsa verde (mild or spicy)
  • 2 green onions (chopped)
  • For the Sauce: ½ cup sour cream
  • 1 tsp hot sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together eggs and milk. Stir in diced ham and half of the shredded cheese.
  3. Heat a non-stick skillet over medium heat and cook the egg mixture until just set (about 5 minutes).
  4. Lay each tortilla flat, fill with the egg mixture, roll tightly, and place seam-side down in a greased baking dish.
  5. Mix sour cream and hot sauce; spread over rolled enchiladas and sprinkle remaining cheese on top.
