- 2 tbsp soy sauce (low-sodium preferred)
- 2 tomatoes, diced
- 1 tbsp browning sauce
- 1 Scotch bonnet pepper (optional)
- 2 cups chicken broth
- Salt and pepper, to taste
- 2 tbsp vegetable oil
Instructions
- Prep the ingredients: Chop onions, bell peppers, carrots, and mince garlic.
- Sear the chicken: Heat oil in a large pot over medium-high heat. Add chicken thighs and cook until golden brown on both sides (5-7 minutes per side). Remove and set aside.
- Sauté aromatics: Add onions and garlic to the pot; sauté until soft (3-4 minutes).
- Add vegetables: Stir in chopped bell peppers and carrots; cook until slightly softened (about 5 minutes).
- Create the sauce: Return chicken to pot; add soy sauce, browning sauce, diced tomatoes, thyme, Scotch bonnet pepper (if using), and chicken broth. Stir well.
