  • 8 ounces brie cheese
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons extra virgin olive oil (divided)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette into 1/2-inch thick pieces and arrange on a baking sheet.
  2. Drizzle with 1 tablespoon of olive oil and bake for about 10 minutes until golden brown and crispy.
  3. In a skillet, heat the remaining olive oil over medium heat. Add sliced onions and cook slowly for 20-25 minutes until caramelized, stirring occasionally.
  4. Stir in balsamic vinegar and thyme; cook for an additional 5 minutes until well combined.
  5. Top each toasted baguette slice with caramelized onions and slices of brie cheese.
  6. Return to the oven and bake for another 5-7 minutes until the brie melts and bubbles.
