  • 8 oz penne pasta
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 1 cup bell peppers, diced (red or yellow)
  • 1 cup tomato sauce
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté until onions are translucent.
  2. Push veggies to the side and add ground beef. Cook until browned, breaking apart with a spatula.
  3. Sprinkle taco seasoning over beef; pour in tomato sauce and mix well.
  4. Meanwhile, cook penne pasta according to package instructions until al dente; drain (reserve some pasta water).
  5. Stir cooked pasta into the skillet with the beef mixture. If too thick, add reserved pasta water gradually.
  6. Mix in shredded cheddar cheese until melted and creamy. Serve hot.
