  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup diced bell peppers (mixed colors)
  • 2 tablespoons Cuban seasoning blend
  • 2 cups low-sodium chicken broth
  • 2 cups shredded cheese (cheddar and mozzarella mix)
  • 2 tablespoons olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish with olive oil.
