- 2 lb chuck roast
- 2 medium yellow onions, sliced
- 2 cups low-sodium beef broth
- 8 oz provolone cheese, sliced
- 4 hoagie rolls
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Season the chuck roast with salt and pepper. In a Dutch oven, heat oil over medium-high and sear the roast until golden brown on all sides. Set aside.
- In the same pot, sauté sliced onions until soft and translucent.
- Return the roast to the pot, add beef broth to cover half of the meat, then stir in Worcestershire sauce and garlic powder.
- Cover and simmer on low for about 3 hours until beef shreds easily with a fork.
- Shred the beef in the pot to soak up juices.
- Preheat broiler. Slice hoagie rolls open and fill with shredded beef topped with provolone cheese. Broil until cheese melts.
