Ingredients

  • 1 cup fresh spinach (chopped)
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 small onion (diced)
  • ½ cup whole milk (or almond/oat milk)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin with nonstick spray or olive oil.
  2. In a skillet over medium heat, add olive oil and sauté diced onion until translucent (about 3-4 minutes). Stir in spinach until wilted.
  3. In a mixing bowl, whisk together eggs and milk; season with salt and pepper.
  4. Gently fold in sautéed spinach mixture and half of the cheese.
  5. Pour the egg mixture into the muffin cups and top with remaining cheese.
  6. Bake for 18-20 minutes until golden brown and set in the center. Allow to cool slightly before serving.
