- 4 large eggs
- 1 cup shredded cheddar cheese
- 1 small onion (diced)
- ½ cup whole milk (or almond/oat milk)
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp extra virgin olive oil
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin with nonstick spray or olive oil.
- In a skillet over medium heat, add olive oil and sauté diced onion until translucent (about 3-4 minutes). Stir in spinach until wilted.
- In a mixing bowl, whisk together eggs and milk; season with salt and pepper.
- Gently fold in sautéed spinach mixture and half of the cheese.
- Pour the egg mixture into the muffin cups and top with remaining cheese.
- Bake for 18-20 minutes until golden brown and set in the center. Allow to cool slightly before serving.
