  • 1 cup sharp cheddar cheese, shredded
  • 2 tbsp taco seasoning
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (mixed colors)
  • 15 oz tomato sauce
  • 1/2 cup sour cream
  • Fresh cilantro (optional)

Instructions

  1. Cook pasta according to package instructions until al dente; drain and set aside.
  2. In a large skillet over medium heat, sauté onion until translucent (3-5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in ground turkey, breaking it apart as it cooks (5-7 minutes) until fully browned. Season to taste.
  4. Add bell peppers and cook for about 3 minutes until softened.
  5. Pour in tomato sauce and taco seasoning; stir well and simmer for 5 minutes.
  6. Mix in cooked pasta, sour cream, and half of the cheddar cheese until evenly combined.
  7. Top with remaining cheese and cover briefly until melted. Garnish with cilantro if desired before serving.
