- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh broccoli florets
- 8 oz fettuccine pasta
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Cook the fettuccine in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- Season chicken breasts with salt and pepper. In a skillet over medium heat, melt 1 tbsp of butter and cook chicken for about 6 minutes per side until golden brown and cooked through. Remove from the pan and let rest before slicing.
- Blanch the broccoli in the same pot of boiling water for about 2 minutes until bright green. Transfer to an ice bath to stop cooking and drain well.
- In the skillet, melt the remaining butter over low heat. Sauté garlic until fragrant (about 1 minute). Gradually whisk in heavy cream, then stir in Parmesan cheese until melted.
- Combine cooked fettuccine, sliced chicken, and blanched broccoli into the Alfredo sauce. Toss gently to coat.
- Serve hot with additional Parmesan sprinkled on top.
