- 8 flour tortillas
- 2 cups shredded cheese (cheddar and Monterey Jack mix)
- 1 cup enchilada sauce (store-bought or homemade)
- 1 medium onion, chopped
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper to taste

Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with cooking spray.
- Boil chicken breasts in salted water until cooked through, about 15-20 minutes. Shred the chicken.
