  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion, finely chopped
  • 1 inch fresh ginger, grated
  • 3 garlic cloves, minced
  • 1 can (14 oz) full-fat coconut milk
  • 2 tbsp korma spice blend
  • ¼ cup fresh cilantro, chopped (for garnish)
  • Salt & pepper to taste

Instructions

  1. Prep your ingredients by chopping the onion finely and grating the ginger.
  2. Heat oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown.
  3. Stir in the minced garlic and grated ginger; cook until fragrant.
  4. Add chicken pieces to the pan and sear until no longer pink.
  5. Pour in coconut milk and korma spice blend; stir well to combine.
  6. Reduce heat to low and simmer for 20-25 minutes until the sauce thickens slightly.
  7. Garnish with fresh cilantro before serving.
