  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 8 oz penne or fusilli pasta
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a skillet over medium heat, add olive oil and diced chicken seasoned with salt and pepper. Sauté for about 7-10 minutes until golden brown.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Pour in heavy cream and sprinkle with Italian seasoning; let simmer for 5 minutes until slightly thickened.
  5. Toss cooked pasta into the skillet with the chicken mixture; combine well, adding reserved pasta water if needed.
  6. Top with mozzarella cheese, cover for 2 minutes until melted.
