- 8 oz penne or fusilli pasta
- 1 cup heavy cream
- 2 cups shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
- In a skillet over medium heat, add olive oil and diced chicken seasoned with salt and pepper. Sauté for about 7-10 minutes until golden brown.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Pour in heavy cream and sprinkle with Italian seasoning; let simmer for 5 minutes until slightly thickened.
- Toss cooked pasta into the skillet with the chicken mixture; combine well, adding reserved pasta water if needed.
- Top with mozzarella cheese, cover for 2 minutes until melted.
