  • 8 oz flat rice noodles
  • 3 cloves garlic, minced
  • 2 large eggs
  • 2 tbsp tamarind paste
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • Juice of 1 lime
  • ½ cup crushed peanuts (for topping)
  • Fresh cilantro (for garnish)

Instructions

  1. Soak the rice noodles in hot water until soft but firm; drain well.
  2. Whisk together tamarind paste, soy sauce, brown sugar, and lime juice; set aside.
