- 1 cup frozen peas
- 1 medium onion (diced)
- 2 stalks celery (chopped)
- 2 cups low-sodium chicken broth

- 2 sheets puff pastry
- 2 tsp fresh thyme
- Salt & pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Cube chicken breasts and chop vegetables.
- In a skillet, melt butter over medium heat. Sauté onions, carrots, celery, and garlic until softened (about 5-7 minutes).
- Add cubed chicken and thyme; cook until chicken is white but not fully cooked (about 5 minutes).
- Stir in flour for one minute, then add chicken broth and cream. Simmer until thickened (5-10 minutes).
- Mix in peas, season with salt and pepper, then remove from heat.
- Spoon filling into a baking dish lined with one sheet of puff pastry. Cover with the second sheet; seal edges.
- Bake for 25-30 minutes until golden brown. Let cool slightly before serving.
