  • 4 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1/4 cup all-purpose flour
  • 1 package (17.3 oz) puff pastry sheets (2 sheets)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  2. In a large skillet over medium heat, add olive oil, diced onion, and minced garlic. Sauté until onions are translucent (4-5 minutes).
  3. Stir in diced chicken breasts seasoned with salt and pepper; cook until browned on all sides (6-8 minutes).
  4. Add fresh spinach and feta cheese; stir until the spinach wilts (2-3 minutes).
  5. Sprinkle flour over the mixture while stirring; gradually pour in chicken broth until thickened (3-4 minutes).
  6. Transfer the mixture to the prepared baking dish; cover with rolled-out puff pastry sheets, sealing edges.
