  • 1 lb boneless, skinless chicken breasts, diced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • Oil for cooking

Instructions

  1. Prepare your ingredients: Wash and chop vegetables and slice chicken into bite-sized pieces.
  2. Cook the chicken: In a large skillet or wok, heat oil over medium-high heat. Stir-fry chicken until golden brown and cooked through (5-7 minutes). Remove from pan.
  3. Sauté aromatics: In the same skillet, add more oil if needed. Sauté minced garlic until fragrant (30 seconds).
  4. Add vegetables: Stir in diced carrots and then frozen peas after two minutes; cook until tender (about 2 more minutes).
  5. Mix in rice: Add cold jasmine rice and cooked chicken to the pan, breaking up any clumps as you stir.
  6. Sauce it up: Pour in soy sauce and sesame oil; stir until well-coated and heated through (2 minutes). Serve garnished with green onions.
