  • 2 chipotle peppers in adobo sauce, chopped

  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 cup tortilla chips for serving
  • 1 cup low-sodium chicken broth
  • 2 tsp cumin powder
  • 2 tsp chili powder
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the chicken into bite-sized pieces and mincing the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook for about 5-7 minutes until golden brown.
  3. Stir in minced garlic, cumin, and chili powder; sauté for an additional minute until fragrant.
  4. Pour in diced tomatoes (with juice), black beans, chipotle peppers, and chicken broth. Stir to combine.
  5. Reduce heat to low and simmer uncovered for 10-15 minutes until slightly thickened.
