Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1/4 tsp peppermint extract (adjust to taste)
  • 1 cup powdered sugar (for filling)
  • 1/4 cup heavy cream (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
  2. In another bowl, cream the softened butter with both sugars until light and fluffy. Add the egg, vanilla extract, and peppermint extract; mix until fully incorporated.
  3. Gradually add the dry mixture to the wet mixture until just combined; avoid overmixing.
  4. Using a cookie scoop, place dough balls on ungreased baking sheets about two inches apart. Bake for 10-12 minutes until slightly firm yet soft.
  5. While cookies cool, whip heavy cream with peppermint extract and powdered sugar until fluffy.
  6. Once cooled, spread or pipe the filling onto half of the cookies and top with another cookie to create a sandwich.
