  • 3 ripe bananas (mashed)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Mix in melted butter, granulated sugar, brown sugar, and eggs until well combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. In a small bowl, mix additional brown sugar and cinnamon for the swirl.
  7. Pour half of the batter into the loaf pan, sprinkle half of the cinnamon mixture on top, then layer with remaining batter and more cinnamon topping.
  8. Bake for about 60 minutes or until a toothpick comes out clean. Let cool before slicing.
