  • 1 cup bell peppers (mixed colors)
  • 1 cup broccoli florets
  • 1 cup carrots (thinly sliced)
  • 1 tbsp fresh ginger (grated)
  • 2 cloves garlic (minced)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • Oil for cooking

Instructions

  1. Prep all ingredients by chopping vegetables into bite-sized pieces and slicing chicken into thin strips.
  2. In a small bowl, whisk together soy sauce, honey or brown sugar, grated ginger, minced garlic, and sesame oil. Set aside.
  3. Heat a large skillet or wok over medium-high heat and add oil.
  4. Cook chicken strips for about 5–7 minutes until golden brown and cooked through.
  5. Add bell peppers, broccoli, and carrots to the skillet; stir-fry for another 4–5 minutes until veggies are tender yet crunchy.
  6. Pour the teriyaki sauce over the stir-fry; toss everything together for an additional 2 minutes until evenly coated.
